Oh boy, what a great recipe this one is! Chicken Asparagus Chowder warms the hearts, the tummies and fills you up all at the same time. Serve with a good crusty rolls or warm corn bread and a salad and you have a very satisfying meal before you. Enjoy!
What you'll need:
- 4 Tbsp. butter
- 1 onion (on the large side and finely chopped)
- 1/2 cup of celery (chopped)
- 1/4 cup of red bell pepper (diced or chopped)
- 1/4 cup of all-purpose flour
- 3 cups of chicken broth (canned or homemade broth)

What to do:
- Heat the butter in a large size sauce pan over medium heat. Sauté the celery and the onion for approximately 3 minutes and then add the bell pepper. Cook it for another minute.
- Next, stir in the flour a little at a time until it is blended in with the vegetable mixture. Add the chicken broth in and stir in to blend.

- Add your diced up potato and bring all to a boil. Then reduce the heat and cover the mixture and simmer it for approximately 15 minutes or until the potato is slightly tender.
